1. Half package of bacon or full pack your choice, if you got to much big deal use the bits the next day on another recipe
2. One pack preshredded tex mex cheese, assorted cheese is good, like monterey pepper jack-colby-cheddar
3. 3 large tomato's
4. 1-2 jalapeno pepper, seeded and minced
5. 1/2 cup diced sweep onion
6. 1/4 cup chopped fresh cilantro or 1tbs dry cilantro from a bottle
7. 3tbs lime juice
8. 1tsp salt
9. 1/2tsp ground pepper
10. 8-16 large flour tortillas
11. some butter for spreading on tortillas
12. sour cream
13. Jar of chile pancho guacamole, usually found in the taco section of grocery store, yellow labelling

Two parts, make the filling early in the morning ahead of time so everything is prepared for dinner and everything cooks in a flash.

Filling

Fry bacon crisp in a frying pan and let sit until it cools and you can break it all up in small pieces, with hands or knife your choice.

Next is the salsa type filling, I numbered the ingridents to make it easy, follow ingridents and instructions from 3-9 and toss in a bowl, cover and refrigerate. Tip for this is every few hours uncover and drain out some of the juices, you dont want this all runny, so you will have to drain it a few times, nothing major.

Okay time to cook, this will cook sort of like a grill cheese. Have all your stuff lined up in order and ready to go quickly. Have bacon bits in one plate, your salsa filling in the bowl, your cheese bag open and your butter and tortillas ready to rock and roll. Heat a frying pan large enough for the tortillas you bought. Butter one side of two tortillas like you would butter two pieces of bread for a grill cheese, place one of the tortillas butter side down in medium heat frying pan and quickly add some of the cheese covering the tortilla, then some salsa, then some bacon bits and then place the other tortilla butter side facing up. Once the bottom of the tortilla begins to brown and the cheese is slightly melted flip over carefully so all the filling stays in and brown other side, should have a little crispness to them but not to much so watch carefully these cook fast. Place on a cutting board or plate and cut like a pizza and then repeat process in frying pan until all your tortillas are gone or you think you have enough.

This cooks really fast so be ready,it tastes great and its pretty simple once you get rollin. Use the sour cream and guacamole for dipping.

I forgot the jalapeno peppers, reread recipe, all good now
