Blueberries are plentiful now. The sauce recipe below is great for toppings on angel food cake, ice cream etc.
Fresh Blueberry Fruit Topping
4 tablespoons granulated sugar
4 tablespoons water
4 teaspoons cornstarch
2 teaspoons grated lemon rind
4 teaspoons fresh-squeezed lemon juice
2 pints fresh blueberries (2pts.=4 cups)
Instructions
In a microwave-safe bowl, whisk together the sugar, water, cornstarch, lemon rind and lemon juice until the sugar dissolves. Add the blueberries, stirring well. Microwave on high for 3 minutes. Stir and then microwave on high for 2 minutes more, or until thickened and bubbly. Spoon over dessert.
Suggestion: When rasperries are in season, substitute raspberries for blueberries.
