Rib Eye Steak and Black Olive Sauce

Dinner for two


Rib eye Steak:

2 thick rib-eye steaks
2 tablespoons olive oil- 1 per steak
2 tablespoon herbes de Provence- 1 per steak
2 teaspoon salt - 1 per steak
2 teaspoon freshly ground black pepper- 1 per steak

Black Olive Sauce:

Black Olive Sauce:
1/2 cup black olives, pitted
3 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 garlic clove
1/4 teaspoon kosher salt or 1/2 teaspoon normal salt
1/2 teaspoon freshly ground black pepper
6 tablespoons extra virgin olive oil
6 tablespoons vegetable oil
2 tablespoons chopped fresh italian parsley


For the Black Olive Sauce combine the olives, red wine vinegar, mustard, garlic, salt, and pepper in a blender and blend until mixed. In a bowl combine the olive oil and vegetable oil. Slowly drizzle the oil into the blender with the machine running. Put Sauce in a bowl and stir in the parsley, serve as a dipping sauce for the steak.

When sauce is done set aside and do up the steaks. Preheat your BBQ or indoor grill pan to mediuim heat. Coat the steaks with olive oil and sprinkle with the Herbs de Provence, salt, and pepper. Cook for 6 to 8 minutes a side until the meat is medium-rare, remove from heat, and allow to rest 5 minutes or so.

Serve with baked taters, french fries or sweet potatoe fries. May look unappetizing to you at first and you may question black olives and steak but once you try it youll love it, I did anyways. Its also quick and easy to make, can also be made with any steak but i like rib eye or t bone, rib eye is on sale at A&P right now.

Sounds tasty. Can you make the Sauce ahead of time and will it keep in the refrig?

Morning mght be fine but the longer it sits the flavour will get more intense and its pretty intense as is. I usually do it an hr or two before hand.

Thanks and I love them to, I just had a little family thingy last wednesday and got 50 wings from the poultry specilist in T burg across from burger king, big fresh wings and they kicked butt!

Next week prolly something light, quick and healthy (fresh fish) with some kickin flavour

Feeds 5-6 people SWISS CHICKEN CASSEROLE

2lbs. boneless skinless breasts
Swiss Chees (sliced or grated) 10 slices
Mushroom soup (14oz.) 1 can
White Wine(dry)1/4 cup
Seasoned Stuffing Mix 2 cups

9x13 pan

Arrange the chicken in dish
combine soup and wine and spread over chicken and cheese
Sprinkle top with dry stuffing mix
Cover with foil and bake for 1 hour covered and the last 10 minutes uncover
This is great served with Fettucini

Skully, you appear to have a real flair for cooking - have you considered that as a profession, perhaps as a caterer? This area could use a good barbecue=type caterer that goes from event to event.
