The cucumbers are plentiful now and these freezer pickles are delicious. They will keep in the fridge for about two months, and in the freezer for up to l year. They taste like a sweet bread and butter pickle.

You will need:
7 cups thinly sliced cucumber (with the peel on)
1 cup thinly sliced sweet onion
1 cup thinly sliced red and green pepper
1tbsp coarse pickling salt
1 cup white vinegar
2 cups white sugar

Combine all ingredients in a large bowl. Stir well and cover. Refrigerate for 3 days, stirring every day. Pack in freezer containers covering with brine to within 1 inch of the top. Freeze. Thaw to serve.

I used about 14 4" pickling cucumbers to make up 7 cups, or you can use english cucumbers in the winter or when they are on sale.
